Fraise Sauvage - Guilt Free Indulgence
Welcome to this blog. My intention is to document my chocolate journey throughout Europe and help inform fellow chocolate lovers and industry professionals what is happening out there! I am currently in Australia and doing the groundwork for this project. Making sure it all is well planned and a very focussed professional development tour. The plan is Barcelona with Chocolatier and Pastry Chef Oriol Balaguer. I will be training there for 6 months in the chocolate kitchen. How exciting!!! After that to Europe to visit Kaoka Organic and Fair Trade Chocolates in France, Weiss Chocolat, Michel Cluizel and who ever else I can find. I am especially interested in the small boutique hand crafted places. Included is checking out what equipments are available (particularly Chocolate World Belgium, Chocolat Form and Martellato in Italy) that are new and innovative in their design. I am dedicated to hand crafted organic and fairly traded chocolate making. However, I am very curious to see what people are using, what they are making and why. If anyone has any suggestions of where I should visit please let me know. I am open to ideas especially if it involves chocolate!
